Ingredients for 1 servings:
- 490 g flour
- 21 g yeast, fresh
- 1 ¼ tsp salt
- 1 tbsp olive oil
- 300 ml water, lukewarm
- 1 tbsp olive oil
- 2 cloves garlic
- Black pepper, ground
- 250 g spinach, fresh
- 225 g mozzarella, grated
- 50 g Parmesan, grated
- 100 g blue cheese, soft (e.g. Gorgonzola)

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 15 minutes
For the dough, put the flour in a bowl and make a well in the middle. Put the yeast in a small bowl, mix it with a little of the water and add it to the well. Stir it into the flour with your finger. Add the salt, olive oil and water and knead everything into a yeast dough. It should be a soft, non-sticky dough, which you then knead briefly on a lightly floured work surface, return it to the bowl, cover with a damp cloth and leave to rise in a warm place for about 30 minutes. It should have increased in volume considerably during this time. In the meantime, prepare the topping by cleaning the spinach and blanching it briefly. Drain it well in a colander and squeeze it out between several layers of kitchen paper. Also preheat the oven to 220°C. I am using a round pizza pan with a diameter of 36cm. However, you can also use a normal baking tray (40x32cm) and line it with baking paper. Remove the dough from the bowl and knead briefly again. Then roll it out on a lightly floured work surface to the size of a pizza pan or baking sheet. Since it will shrink, always work in stages. Roll it out, let it rest briefly, then roll it out, let it rest briefly, until it is the size of the pizza pan/baking sheet. Place it in the respective dish and spread a tablespoon of olive oil evenly over it. I always leave a border of about 2cm free. Now spread the well-squeezed spinach evenly over it. Then scatter the finely chopped garlic over the spinach and sprinkle everything with a little black pepper. You can add a little salt if you like, but I don’t. Sprinkle the grated mozzarella and Parmesan on top and crumble the blue cheese over it. Place in the oven and bake until golden brown. Remove from the oven, cut into pieces, and serve.
