Playful Sweet Potato Coconut Soup with Dash of Peanut
The perfect playful sweet potato coconut soup with dash of peanut recipe with a picture and simple step-by-step instructions.
- 0,75 l Vegetable broth
- 3 Pc. Sweet potatoes
- 4 Pc. Tomatoes
- 250 ml Coconut milk
- 1 tbsp Peanut butter
- 2 Pc. Clove of garlic
- 0,5 Pc. Chilli pepper
- Ginger
- Curry paste
- Soy sauce
- Finely chopped parsley
- Use vegetable stock (everything homemade). Cut the sweet potatoes into smaller pieces. Put tomatoes in boiling water and peel off the skin. Add the potatoes, tomatoes with a little ginger, chili peppers and garlic clove to the broth and cook for about 30 minutes. Puree with a puree stick (remove 1/4 chilli pepper beforehand).
- Add coconut milk and peanut cream. Add a dash of soy sauce. If the soup is too sweet, a little crème fraîche can be added if necessary. The soup should be slightly spicy. Garnish with parsley.
