Playful Sweet Potato Coconut Soup with Dash of Peanut

The perfect playful sweet potato coconut soup with dash of peanut recipe with a picture and simple step-by-step instructions.

  • 0,75 l Vegetable broth
  • 3 Pc. Sweet potatoes
  • 4 Pc. Tomatoes
  • 250 ml Coconut milk
  • 1 tbsp Peanut butter
  • 2 Pc. Clove of garlic
  • 0,5 Pc. Chilli pepper
  • Ginger
  • Curry paste
  • Soy sauce
  • Finely chopped parsley
  1. Use vegetable stock (everything homemade). Cut the sweet potatoes into smaller pieces. Put tomatoes in boiling water and peel off the skin. Add the potatoes, tomatoes with a little ginger, chili peppers and garlic clove to the broth and cook for about 30 minutes. Puree with a puree stick (remove 1/4 chilli pepper beforehand).
  2. Add coconut milk and peanut cream. Add a dash of soy sauce. If the soup is too sweet, a little crème fraîche can be added if necessary. The soup should be slightly spicy. Garnish with parsley.
