Sweet Potato and Coconut Soup

- 500 g Sweet potato
- 1 Pc. Big onion
- 1 Pc. Big tomato
- 1 Pc. Clove of garlic
- 500 ml Vegetable broth
- 400 ml Coconut milk
- 20 g Ginger
- 1 tbsp Oil
- Salt and pepper
- Tabasco
- 1 cups Creme fraiche Cheese
- Chives
- Clean, peel and cut the vegetables into small cubes and sauté in the oil in a large saucepan. Add the stock and simmer for 15 to 20 minutes with the lid closed on a low level. Puree everything well, add coconut milk, add spices and bring to the boil again. Place some crème fraîche and chives as a garnish.
