Sweet Potato and Coconut Soup

The perfect sweet potato and coconut soup recipe with a picture and simple step-by-step instructions.

  • 500 g Sweet potato
  • 1 Pc. Big onion
  • 1 Pc. Big tomato
  • 1 Pc. Clove of garlic
  • 500 ml Vegetable broth
  • 400 ml Coconut milk
  • 20 g Ginger
  • 1 tbsp Oil
  • Salt and pepper
  • Tabasco
  • 1 cups Creme fraiche Cheese
  • Chives
  1. Clean, peel and cut the vegetables into small cubes and sauté in the oil in a large saucepan. Add the stock and simmer for 15 to 20 minutes with the lid closed on a low level. Puree everything well, add coconut milk, add spices and bring to the boil again. Place some crème fraîche and chives as a garnish.
