Plum Amarettini Muffins

Ingredients for 1 servings:

  • 300 g plum(s) or damsons, pitted, chopped
  • 150 g biscuits (Amarettini)
  • 150 g flour
  • 3 tsp, leveled baking powder
  • 100 g butter, soft
  • 100 g sugar
  • 2 large eggs
  • 200 g natural yogurt

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 180°C and line a muffin tin with paper baking cups. Wash, pit, and dice the plums. Place 100g of the amaretti biscuits in a freezer bag and crush them very finely with a rolling pin. Put the flour and baking powder in a bowl, add the amaretti biscuits, and mix everything together. Add the remaining amaretti biscuits to the freezer bag. Break or crush them into fairly small pieces, preferably with the heel of your hand, and set them aside. Cream the soft butter and sugar until creamy. Then add the eggs and mix in. Gradually stir in the yogurt with the flour mixture. Fold in the plums with a spatula. Spoon the batter into the prepared muffin tin. Distribute the remaining amaretti biscuits evenly among the muffins. Place in the oven and bake for about 20-25 minutes, or until golden brown. Remove from the oven and let cool slightly. Then remove from the pan and serve while still warm or cooled. If you like, you can dust them with a little powdered sugar; I made 15 of the dough.
