Plum and tomato bruschetta

Ingredients for 4 servings:

  • 4 tomatoes (vine tomatoes)
  • 3 handfuls of arugula
  • 2 cloves garlic
  • 2 shallots
  • 1 dashes lemon juice
  • salt and pepper
  • some olive oil
  • some balsamic vinegar reduction
  • 1 ciabatta for baking
  • 5 plums or prunes

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, place the ciabatta in the oven and bake according to the package instructions. You should bake the bread for a few minutes less than indicated on the package. In the meantime, dice the tomatoes and place them in a bowl. Then finely chop the arugula, dice the shallots, finely chop the garlic, and slice the plums. Add all of these ingredients to the tomatoes and mix everything together. Then add about 3 tablespoons of oil and season with salt, pepper, or lemon juice. Once the ciabatta is baked, slice it and drizzle the tops with olive oil. Then return the bread slices to the oven for a few more minutes. Finally, top the ciabatta slices with the bruschetta mixture and drizzle with balsamic reduction.
