Ingredients for 12 servings:
- 150 g wheat flour type 405
- 2 tsp baking powder
- 100 g sugar
- 1 pinch of salt
- 120 g butter, soft
- 2 eggs
- 750 g plum(s) or damsons
- 50 g butter, soft
- 50 g sugar
- 100 g wheat flour type 405
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Grease a 26cm springform pan with butter. Preheat the oven to 180°C (top/bottom heat). Wash and drain the plums, halve them, and remove the stones. Combine the flour, baking powder, 100g of sugar, and salt in a mixing bowl. Add the butter and eggs and beat with a hand mixer on high until fluffy (approx. 1 minute). Pour the batter into the prepared pan and smooth the surface. Place the plum halves, close together, upright in the batter. For the crumble, briefly knead the 50g butter and 50g sugar with your hands. Add the flour, knead into coarse crumbles, and spread directly over the plums. Bake the cake in the preheated oven for approx. 40 minutes. Serve with freshly whipped cream, if desired.
