Plum Crumble Cake
The perfect plum crumble cake recipe with a picture and simple step-by-step instructions.
Dough:
- 1 Pck. Dry yeast
- 80 ml Milk lukewarm
- 300 g Flour
- 30 g Sugar
- 1 Egg
- 1 pinch Salt
- 75 g Butter very soft
- 2 well heaped tbsp Yogurt 1.5%
- 650 g Pitted plums
- Possibly some sugar to sprinkle on
Streusel:
- 200 g Flour
- 115 g Soft butter
- 100 g Sugar
- 1 tsp Cinnamon
Dough:
- Sift the flour into a larger bowl. Make a large hollow in the middle, sprinkle with dry yeast and 1 teaspoon of sugar and pour lukewarm milk on top. Then stir until the yeast has dissolved. You can add a little flour from the edge. Then close the bowl well and place in the illuminated oven for approx. 15 minutes.
- When it has expired, take the bowl out of the oven. When the yeast-milk mixture has formed bubbles and doubled in size, add the sugar, egg, salt, butter and yoghurt and knead everything with the dough hook of the hand mixer. Do this until you have a smooth dough that turns away from the bowl wall. Then close the bowl again and place in the lighted oven for 1 hour.
Plums and Streusel:
- While the dough is resting, wash, stone and cut the plums into wedges. Put the flour, butter, sugar and cinnamon in a bowl and knead roughly with the dough hook and then with your hands. In this way, all the ingredients combine well and a firm dough is created at first. Then reinsert the dough hook and drive it vigorously through the dough several times. This is how you get optimal crumble.
Completion:
- Line a rectangular shape 20 x 30 cm with parchment paper. (corresponds roughly to a round 26). After the dough has rested, preheat the oven to 180 ° O / bottom heat.
- Do not knead the “risen” dough any more, but pour it directly from the bowl into the mold with a spatula. Dust its surface very lightly with flour and spread it in the mold with the flat of your hand and plate it.
- Arrange the prepared plum wedges very close together. If the plums are very tart, sprinkle a little sugar on them. I had the thick, round, strong purple ones, so it wasn’t necessary. Finally, spread the crumble thickly over the plums and slide the dish into the oven on the 2nd shelf from the bottom.
- The baking time is 30 minutes. However, it is still advisable to make the wooden stick test. No dough should stick to it when it is pulled out. The sprinkles and the bottom should be golden brown. The yoghurt makes the dough particularly “fluffy”.
