Plum Dachi with Thermomix

The perfect plum dachi with thermomix recipe with a picture and simple step-by-step instructions.

for the yeast dough:

  • 125 g Milk
  • 1 cube Fresh yeast
  • 350 g Flour
  • 75 g Sugar
  • 50 g Soft butter or margarine
  • 1 pinch Salt
  • 1 Pc. Egg

for covering:

  • 2 kg Plums
  • 30 g Brown sugar
  • 1 packet Vanilla sugar
  • 1 tsp Cinnamon
  1. For the batter, add the milk and yeast cubes to the mixing bowl. Heat for 2 minutes / level 1/37 degrees. Add the remaining dough ingredients and work on kneading for 2 minutes to form a dough. Let rise in the mixing bowl for about 30 – 50 minutes until the dough volume has increased significantly.
  2. When the dough volume has doubled, knead again for 30 seconds using the kneading stage. Then roll out the dough on a greased and floured baking sheet (approx. 30 x 40 cm for a thick base; normal baking sheet oven size if the base is to be very thin).
  3. Halve the washed plums and remove the stones. Cut the halves at the top again. Then place them tightly next to each other on the rolled out dough like a roof tile. Mix the sugar, vanilla sugar and cinnamon and sprinkle half over the top.
  4. Bake at 200 degrees top / bottom heat in the preheated oven on the middle rack for about 35 minutes until golden yellow. Take the cake out of the oven and sprinkle with the remaining cinnamon and sugar mixture.
  5. The plum dachi is easy to freeze piece by piece. So you always have something for spontaneous visits to the house. If you don’t use a Thermomix, you can of course prepare the yeast dough in the usual way with the ingredients listed above.
