Ingredients for 1 servings:

  • 200 g prunes, pitted
  • 250 g butter
  • 100 g sugar
  • 3 eggs
  • 320 g oat flakes, wholegrain
  • 100 g almond flakes
  • 100 g raisins
  • 1 tsp baking powder
  • ½ tsp cinnamon powder

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Chop the plums and, if using large ones, raisins very finely. Cream together the butter, sugar, and eggs until creamy. Stir in the oats, almonds, plums, raisins, baking powder, and cinnamon. Scoop out teaspoon-sized portions and either shape them into macaroons with two teaspoons or form them into small balls with your hands (it will be very mushy, but the macarons will hold together better). Bake at 150°C (300°F) for 30-35 minutes.
