Plum muffins from the Omnia oven

Ingredients for 1 servings:

  • 2 eggs, size M
  • 15 g butter, liquid
  • 35 g sugar
  • 90 g walnuts, ground
  • 50 g wheat flour type 550
  • 3 g baking powder
  • 20 g marzipan paste
  • 2 large plums
  • 15 g hazelnuts, roasted
  • 5 g sugar
  • 1 g Ceylon cinnamon
  • 10 g butter flakes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Mix the eggs, melted butter, and sugar in a bowl. Then add the ground walnuts, flour, and baking powder and mix in, but don’t stir for long; the ingredients should just be combined. Divide the batter between 7 muffin cases. Cut the marzipan into small cubes of about 0.5 cm. Pit the plums and also cut them into cubes of 0.5 – 0.8 cm. Press the plum and marzipan pieces into the batter. Roughly chop the hazelnuts and scatter them on top. For the cinnamon sugar, mix 5 g of sugar with 1 g of Ceylon cinnamon and sprinkle over the muffins, then top with butter flakes. Bake on top of the gas stove on the smallest mark with the flame set to high for 5 minutes, then reduce the flame to about 1/2 size and bake the muffins for 30 minutes until golden brown. Do the skewer test.
