Plum farmer's cake with poppy seeds

Ingredients for 1 servings:

  • 500 g plums
  • 500 g low-fat curd cheese
  • 2 eggs, size M
  • 250 g sugar
  • 250 g poppy seed cake
  • 550 g flour
  • 375 g butter
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • Fat and flour for the mold
  • possibly powdered sugar for dusting

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Wash, halve, and pit the plums. Mix together the quark, eggs, 50g sugar, and poppy seed mixture. Knead the flour, butter (cut into pieces), 200g sugar, salt, and vanilla sugar, first using the dough hook of a mixer, then by hand, until crumbly. Place half of the crumble in a greased and floured springform pan (28cm diameter) and press down to form a smooth base. Pour half of the quark and poppy seed mixture into the pan and spread evenly. Distribute the plums on top, then add the remaining quark mixture. Sprinkle with the remaining crumble. Bake on the bottom rack of a preheated oven (electric oven: 180°C/fan oven 160°C) for about 1 hour. Remove and let cool. Remove the cake from the pan and dust with powdered sugar, if desired. Serve with whipped cream. Makes 16 slices. 300 kcal per slice.
