Ingredients for 2 servings:
- 40 g arugula
- 12 slice(s) smoked bacon
- 6 dates, dried
- 6 prunes
- 50 ml olive oil, for frying
- 1 small garlic clove(s)
- 20 g Parmesan cheese, in one piece
- 2 tbsp olive oil, for the dressing
- 1 tbsp balsamic vinegar, lighter
- 1 shot of water, if needed
- 1 tsp honey
Instructions

as a hearty starter or as a delicious salad
Wash the arugula and spin dry. Then arrange it on the plates. If the leaves are very large, tear them into small pieces. Make a dressing from olive oil, balsamic vinegar, warmed honey, salt, and pepper. If the dressing is too thick, thin it with a splash of water. Set the dressing aside. Pour it over the salad just before serving. Wrap the bacon slices around the dates and prunes and secure them with a toothpick. If you don’t like one of the two fruits, simply use double the amount of the fruit you like best. If the bacon slices are too large, half a slice is sufficient. It’s best to cut them diagonally and wrap them up from the tip. Heat the olive oil with the garlic clove (this adds a nice aroma). Fry the wrapped fruit on all sides in a pan until the bacon is nice and crispy. Season with salt and pepper (preferably freshly ground) to taste. Now pour the dressing over the arugula salad. Distribute the prepared fruit over the salad. Sprinkle everything with freshly grated Parmesan cheese and serve immediately. Serve with a delicious baguette.
