Ingredients for 1 servings:

  • 500 g flour, ( 405 )
  • 1 cube of yeast (42 g)
  • 80 g sugar
  • 1 egg(s)
  • 180 g milk (approx.)
  • 80 g butter
  • 1 pinch(s) of salt, some lemon flavor
  • 100 g butter, for soaking
  • 30 g flour, for soaking

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Mix the sugar and yeast in a mixing bowl until a paste forms. Add the milk and egg. Add the flour, salt, lemon juice, and softened butter. Knead the yeast dough with a mixer until it pulls away from the edges. Cover and let it rise in a place that is not too warm. The dough should not be too soft. Mix the butter and flour together, flatten them, and chill. Roll the yeast dough into a rectangle. Place the chilled flour and butter on one half and fold the remaining dough over it. Roll out the dough sheet to about 1/2 cm thick and fold it into three layers. (Single turn) Chill for about 1/2 hour so the butter does not become too soft and the dough can relax. Then give it another “Single turn.” After a further resting period, the puff pastry can be made into various pastries.
