Ingredients for 2 servings:
- 650 ml vegetable stock
- 200 g polenta
- 1 onion(s)
- 2 eggs
- 50 g cheese, grated
- 1 tsp, heaped seasoning mix (chip salt)
- 1 tbsp paprika powder, sweet
- possibly salt and pepper
- e.g. breadcrumbs
- 1 tbsp sesame seeds

Bring the vegetable stock to a boil and stir in the polenta. Then let it stand and cool. Peel the onion and chop as finely as possible. Place the onion, eggs, and cheese in a bowl and mix with the polenta mixture once it has cooled sufficiently. Add the potato salt, paprika, and sesame seeds. Season to taste with salt and pepper. Stir in the breadcrumbs as needed until they reach a slightly sticky, but not too moist, consistency. Then form flat patties and fry them in a pan until golden brown. I always based the shape on small hash browns rather than meatballs. Sour cream and a fresh green salad go best with this.
