Ingredients for 1 servings:

  • 150 g wheat flour
  • 100 g almond(s), ground
  • 150 g powdered sugar
  • 1 tbsp cinnamon
  • 1 pinch of salt
  • 1 lemon(s), untreated, grated peel and half of the juice
  • 100 g lard or soft butter
  • Powdered sugar, for dusting

Working time approx. 30 minutes; Total time approx. 30 minutes

Almond and lard cookies from Seville, makes about 34 pieces

Lightly toast the flour in a dry pan until lightly browned. Mix the almonds, sugar, cinnamon, and salt in a bowl, add the flour and finely grated lemon zest. Squeeze the lemon, add half of the lemon juice and lard to the flour mixture, and knead well. Form walnut-sized pieces of dough. Place these on a baking sheet lined with baking paper and flatten slightly. Then chill for about 30 minutes. Dust the polvorenes with powdered sugar and bake in an oven preheated to 170°C for about 12 minutes. Then, while still warm, dust again with powdered sugar and let cool.
