Ingredients for 1 servings:

  • 6 lemon(s), untreated
  • 1 pomelo(s)
  • 125 g sugar
  • 1 tsp turmeric
  • 2 tsp salt
  • ½ tsp cayenne pepper
  • 1 tsp chili flakes
  • 2 tbsp olive oil

Finely peel the lemon zest and cut into julienne strips. Cover with cold water and bring to a boil. Then drain. Fillet the lemons and pomelo. Squeeze the remaining juice from the skins by hand. Simmer the fillets, juice, and zest with the sugar for about 30 minutes. Then add the spices and oil and simmer for another 5 minutes. While still hot, pour into jars and let cool upside down. This tangy jam keeps for about 3 months and goes well with fish, poultry, and risotto. This jam really does have a very distinctive, bitter flavor and is only suitable for people who like it!
