Porcini mushroom and truffle pasta in Parmesan butter sauce

Ingredients for 2 servings:

  • 100 g butter
  • 2 tbsp Metaxa, or Sherry
  • 2 tomatoes
  • 100 g Parmesan, freshly grated
  • 1 handful of basil
  • 1 pack of pasta (porcini mushroom and truffle)
  • Salt

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cook the porcini mushroom truffle pasta according to the package instructions. Meanwhile, dice the tomatoes and melt the butter in a pan over low to medium heat. When the butter turns light brown, gradually add half of the freshly grated Parmesan cheese, stirring constantly. Add the Metaxa or sherry, then the tomatoes. Drain the pasta and add it to the sauce, gently tossing. Serve everything on a pasta plate and sprinkle with basil and Parmesan cheese.
