Pork baked with cheese sauce à la Gabi

Ingredients for 4 servings:

  • 300 g roast pork – leftovers, diced
  • 500 g fresh mushrooms, sliced
  • 1 lemon(s), the juice
  • 3 medium-sized onions, diced
  • 2 bunches of flat-leaf parsley, finely chopped (set some aside for sprinkling)
  • 50 g butter
  • 30 g flour
  • 250 ml milk
  • 250 ml meat broth, instant
  • Salt
  • Pepper, white, from the mill
  • 1 processed cheese corner
  • 40 g cheese, grated Emmental
  • butter

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

Recycling leftovers

Drizzle the mushroom slices with lemon juice. Heat half the butter, sauté the onions until golden brown, add the mushrooms, and braise for about 5 minutes. Add the meat cubes and parsley. Heat the remaining butter in a saucepan and sauté the flour while stirring. Deglaze with milk and meat broth, season, and simmer gently for 5 minutes. Add the cheese and stir until dissolved. Transfer the meat mixture to a greased baking dish, pour over the cheese sauce, sprinkle with cheese, and top with butter flakes. Bake in a preheated oven at 200°C for about 15 minutes, then sprinkle with the remaining parsley to serve. Serve with boiled potatoes.
