Pork chops Normandy style

Ingredients for 4 servings:

  • 4 pork chops
  • 6 small onions, quartered
  • 200 g tomatoes, peeled, quartered
  • 2 apples, pitted, quartered
  • 150 g mushrooms, cleaned, quartered
  • 400 ml broth
  • 4 tbsp cider
  • 1 tbsp thyme, dried
  • 25 g butter
  • 2 tsp oil
  • Salt
  • Black pepper, freshly ground
  • 1 tsp flour
  • Parsley

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Heat oil and butter in an ovenproof pot. Fry the onions until golden brown. Add the chops and sear on both sides. Sauté the remaining vegetables and apples for 3 minutes. Dust with a little flour. After 2 minutes, deglaze with stock and cider. Season with salt, pepper, and thyme. Cover the pot and bake in the oven at 180°C for 45 minutes. Garnish with chopped parsley. Serve with a baguette.
