Ingredients for 4 servings:
- 600 g pork fillet(s)
- 20 g clarified butter
- 1 bag of potatoes (fried potatoes), frozen, 450 g
- salt and pepper
- 40 g Parmesan, freshly grated
- 200 g crème fraîche
- Fat for the mold
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
Season the pork fillet with salt and pepper and sear in clarified butter. Preheat the oven to 225°C (top/bottom heat) or gas mark 4. Place the fillet in a greased casserole dish. Arrange the thawed fried potatoes on the side. Season everything with salt and pepper. Pour half of the crème fraîche and grated Parmesan cheese over the potatoes and place the casserole in the oven. After 15 minutes of cooking, add the remaining cheese mixture and cook for another 5 minutes. Serve with a tomato salad.
