Pork fillet 'Caprese'

Ingredients for 4 servings:

  • 700 g pork fillet(s)
  • 2 zucchinis
  • 4 tomatoes
  • 2 packs of mozzarella
  • 2 bunches of basil
  • 10 tbsp olive oil
  • 4 tbsp Parmesan, grated
  • salt and pepper
  • Cayenne pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash the pork fillet, pat dry, cut into 8 slices, and pound them slightly flatter. Clean and rinse the zucchini, then slice diagonally. Clean and rinse the tomatoes, then slice them. Slice the mozzarella. Rinse the basil, shake dry, pick off the leaves, and roughly chop. Mix the basil with 8 tablespoons of oil and the grated Parmesan cheese, and puree. Season with salt and pepper. Preheat the oven to 200°C (top/bottom heat 180°C). Arrange the zucchini slices in a large, shallow baking dish and drizzle with 2 tablespoons of oil. Season with salt and pepper. Season the meat with salt and pepper and place on top of the zucchini. Place the tomato and mozzarella slices on top of the meat, sprinkle with a little cayenne pepper, and bake everything in the hot oven for about 20 minutes. Serve drizzled with pesto. Enjoy with baguette.
