Ingredients for 4 servings:
- 600 g pork fillet(s)
- 8 slices of bacon (breakfast bacon)
- 5 tomatoes, ripe
- 1 m.-sized onion(s)
- 2 garlic cloves
- 1 tbsp oil
- salt and pepper
- 2 tbsp tomato paste
- 250 g whipped cream
- 1 tsp herbs, dried Italian
- Paprika powder, sweet
- Cayenne pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the pork fillet into medallions, season, and wrap in bacon. Dice the tomatoes and onions. Brown the medallions in hot oil for 1-2 minutes per side and place in a greased baking dish. Sauté the onions and the pressed garlic in the fat until translucent. Briefly fry the tomatoes. Sauté the tomato paste and stir in the cream and herbs. Season well with paprika and cayenne pepper. Season to taste. Pour the sauce over the meat. Bake in a preheated oven at 200°C for 15-20 minutes.
