Pork fillet in bacon and herb coating

Ingredients for 2 servings:

  • 500 g pork fillet(s)
  • 300g bacon
  • 1 garlic clove(s)
  • 1 tsp, leveled lemon zest
  • 2 sprigs rosemary
  • 3 sprigs of thyme
  • 2 sprigs basil
  • 1 sprig(s) chervil
  • 60 ml olive oil
  • salt and pepper
  • pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Low-carb

First, wash the herbs and then pluck off the leaves/needles. Peel and roughly chop the garlic. Crush the herbs, oil, garlic, salt, pepper, and lemon zest in a mortar and pestle and mix. Use a sharp knife to trim the silverskin and fat from the fillet. Wrap the bacon around the fillet and press firmly. Brush with the herb paste and then sear on all sides in a pan. Finally, cook in an ovenproof dish in a preheated oven at 80°C (top/bottom heat) for 15 to 20 minutes and serve. Approx. 967 kcal per serving.
