Meatballs, special and spicy

Ingredients for 10 servings:

  • 1 kg minced meat, half and half
  • 1 bunch of spring onions or 2 onions, chopped
  • ½ bunch parsley, flat
  • 250 g low-fat curd cheese
  • 1 tsp sambal oelek
  • 3 tbsp Parmesan, grated
  • 1 clove(s) garlic, finely chopped
  • salt and pepper
  • Oil (e.g. olive oil or safflower oil)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Low-carb

Mix the ingredients with a fork until a firm dough forms. Add garlic to taste, or omit if you don’t like it at all (I usually use 4 thick cloves). Fry about 20 meatballs in the hot fat from the dough in a non-stick pan greased with high-quality oil. If you’re on a low-carb diet, add as much salad or vegetables as you like. These meatballs are also delicious cold.
