Pork fillet in cognac sauce

Ingredients for 6 servings:

  • 2 pork fillets
  • salt and pepper
  • 100 g butter
  • 2 garlic cloves
  • Thyme
  • 2 tbsp lemon juice
  • Cayenne pepper
  • cognac
  • 250 ml sweet cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Season the pork fillets with pepper and salt, and sear briefly in a pan. Then place in a baking dish. Melt the butter in the pan, then stir in the lemon juice, cayenne pepper, thyme, and crushed garlic. Pour the liquid over the fillets and bake in the oven at approximately 200°C (fan oven) for approximately 20-25 minutes. Remove the meat from the oven and keep the fillets warm on a platter. Season the liquid in the baking dish (on the stovetop) with cognac and cream (adjust seasoning if desired). Slice the meat and drizzle with the sauce. Serve with pasta or baguette.
