Pork Fillet with Fried Mushroom Potatoes

Ingredients
 

  • 500 g Pork tenderloin
  • 1 bowl Mushrooms
  • 1 bunch Spring onions fresh
  • Cooked potatoes
  • Steak pepper
  • Butter for frying
  • Herb butter
  • Pepper and salt

Instructions
 

  • Divide the fillet into pieces 2 finger-thick. Clean the spring onions and cut into pieces. Cut the potatoes into slices. Clean and halve the mushrooms.

Preheat the oven to 100 °

  • Melt butter in an iron pan and sear the fillet pieces on all sides. Add half of the spring onions and fry briefly. Season with steak pepper, pour flakes of herb butter over the fillet and cook for about 10 minutes. Place in the preheated oven.
  • Melt some butter in another pan and fry the mushrooms with the remaining spring onions. Add the potato slices, fry with them. Pepper and salt.
  • Take the fillet out of the oven and serve with the fried mushroom potatoes. As a side dish we had asparagus with hollandaise sauce.
