Pork Fillet with Mushrooms and Sweet Potatoes

- 200 g Fresh mushrooms
- 200 g Orange sweet potatoes
- 0,5 bunch Spring onions fresh
- 300 g Pork tenderloin
- 1 tbsp Oil
- 150 ml Vegetable stock
- 1 tsp Lemon juice
- Salt and pepper
- Clean the mushrooms and cut into thin slices. Peel and finely dice the potatoes. Clean the spring onions and cut into fine rings. Season the pork fillet well with salt and pepper and fry all over in hot oil.
- Place in an ovenproof dish. Continue cooking in the preheated oven at 200 degrees (convection 180 degrees) on the 2 runners from the bottom for about 15 minutes. Briefly fry the potatoes and mushrooms in the pan, season with salt and pepper, add to the meat and cook at the same time.
