Pork fillet wrapped in bacon with curry cream sauce

Ingredients for 10 servings:

  • 1.8 kg pork fillet(s)
  • 40 g parsley
  • 6 tbsp Dijon mustard
  • 2 tsp salt
  • 2 tsp pepper
  • 20 slices of bacon
  • 600 g sour cream
  • 400 g cream
  • 7 tsp curry powder
  • 2 tsp cayenne pepper
  • 60 g tomato paste

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Trim the meat of any fat and tendons and cut into 2-3 cm thick medallions. Finely chop the parsley. Mix the mustard, salt, and pepper. Brush each slice of bacon with the mixture and wrap each medallion in it. For the sauce, mix the sour cream, cream, curry powder, cayenne pepper, tomato paste, and parsley. Reserve about 1/4 of the parsley for garnishing. Place everything in a casserole dish and place in the oven at 180°C (top/bottom heat) for 30 minutes. Garnish with the remaining parsley before serving. Serve with bread and wine. Mashed potatoes or beans also go well as a side dish.
