Ingredients for 6 servings:

  • 1 large pork fillet(s), approx. 600 g
  • 400 g minced pork
  • 1 onion(s)
  • 1 egg(s)
  • salt and pepper
  • Paprika powder, sweet
  • 20 slice(s) bacon (rib bacon) or 2 packs bacon

Remove the silver skin from the fillet and cut it in half. Mix the minced meat with the finely diced onion, egg, and seasoning. Place a piece of cling film on the work surface. Layer 10 slices of ribeye bacon on top (I like to use sliced ​​bacon from the butcher, as the bacon is usually very thin and not so easy to handle). Spread half of the minced meat over each slice of bacon. Place the fillet on top and wrap it up with the cling film. Place seam-side down in a shallow roasting pan or baking sheet. Cook in a preheated oven at 180°C for 30 minutes. Then either maintain the temperature for another 20 minutes and finish by using the grill function to brown it slightly, or use the hot air grill function for 20 minutes. This dish is also suitable for large groups. Up to 4 strands of fillet will fit on one baking sheet.
