Pork fillets topped with bacon and tomato cream sauce

Ingredients for 4 servings:

  • 300 ml sweet cream
  • 150 ml vegetable stock
  • 4 tbsp tomato paste
  • 1 tbsp, crushed paprika powder, sweet
  • 1 tsp, leveled salt
  • ¼ tsp black pepper, freshly ground
  • 750 g pork fillet(s), cut into 8 slices
  • 8 slice(s) bacon, thinly sliced
  • 1 tbsp oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Combine the first 6 ingredients, from cream to pepper, in a saucepan and mix well. Bring to a boil and simmer for 5 minutes. Meanwhile, wrap the fillets in bacon, season with pepper, and a little salt. Then sear them on both sides in hot oil. Transfer to a baking dish and pour the hot sauce over the fillet. Bake in an oven preheated to 190°C (top/bottom heat) for 20 minutes. Serve with pasta or rice.
