Pork roll roast in roasting bag

Ingredients for 4 servings:

  • 1 tsp mustard powder
  • 1 tsp marjoram
  • 1 tsp sweet paprika powder
  • ½ tsp salt (onion salt)
  • ½ tsp garlic salt
  • some pepper
  • some salt
  • 1 kg roast pork (rolled roast)
  • some oil
  • 1 bunch of soup greens, cleaned and cut into small cubes
  • ½ liter meat broth
  • 1 tsp cornstarch OR:
  • 4 g locust bean gum
  • Sugar or other sweetener to round off
  • n. B. Maggi , to round off

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes

Mix together the spices for the mixture. Pat the meat dry and rub the mixture all over. Place it in a standard roasting bag, add the vegetables, and pour in a cup of the broth. Seal the roasting bag. Place it on the lowest rack in the oven and cook for about 1.5 hours at 160°C. Then remove the bag and roast from the oven, carefully cut open across the top, lift out the roast and place it on a board, strain the vegetables, and pour the stock into a container (a fat separator jug!). Pour the fat into a saucepan and top up with the remaining broth until you can make enough gravy. Thicken with starch and season to taste. Serve with paprika sauerkraut and potatoes, bread dumplings, or dumplings.
