Pork steaks with green beans and pepperoni

Ingredients for 4 servings:

  • 4 pork loin steaks
  • 1 kg green beans
  • 1 onion(s), red
  • 1 pepper, red
  • 6 stalks of savory
  • 6 sprigs of thyme
  • 1 tbsp lemon juice
  • 3 tbsp butter
  • 3 tbsp vegetable oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Pat the pork steaks dry. Deseed the peppers and chop them very finely. Pick the leaves off the thyme and roughly chop them. Pick the leaves off the savory and roughly chop them. Trim the beans and cut them into bite-sized pieces. Peel and finely chop the onion. Mix a marinade with 2 tablespoons of vegetable oil, lemon juice, half of the chopped peppers, chopped thyme, a little pepper, and salt. Brush the pork steaks with the marinade and let it sit for a few minutes. Cook the beans in plenty of salted water until al dente. Drain into a sieve, drain well, and set aside briefly. Heat two tablespoons of butter in a saucepan. Briefly sauté the onion and the second half of the chopped peppers. Add the third tablespoon of butter, the cooked beans, and the savory, and toss everything together for a few minutes. Season with pepper and salt. Heat the remaining vegetable oil in a pan and sear the pork steaks briefly but very quickly on both sides, then cook slowly over medium heat until cooked through. Arrange the beans and steaks on plates and serve immediately while hot.
