Pork with coriander and fresh pineapple

Ingredients for 4 servings:

  • 400 g pork fillet(s)
  • 1 m.-sized pineapple, a quarter of it
  • 1 tbsp oil
  • 4 clove(s) garlic, chopped
  • 4 spring onions, cut into rings
  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 12 g coriander leaves, fresh
  • 1 chili pepper(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the pork fillet into thin slices (using a slicer). Heat the oil in a wok, fry the garlic and spring onions for 1 minute, then remove. Heat the wok to high, and fry the meat in batches for about 3 minutes. Add everything to the wok, along with the pineapple. Mix with the fish sauce, lime juice, and chili. Sprinkle with coriander leaves and mix lightly. Serve with rice.
