Ingredients for 2 servings:

  • 6 cl vodka
  • 6 cl passion fruit juice
  • 2 cl lime juice
  • 3 cl passion fruit syrup
  • 2 cl vanilla syrup
  • ½ egg white
  • 4 ice cubes
  • 1 passion fruit, for garnishing
  • 6 cl Champagne (alternatively Prosecco), to top up

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and slice the passion fruit. Blend all ingredients (except champagne) in a shaker for about 40-60 seconds. If you like, you can use a vegan egg white substitute instead of the egg white, or skip the egg white altogether. After blending, strain the drink through a bar strainer into chilled cocktail glasses. Finally, garnish the drink with the passion fruit slices and top with champagne.
