Caraway waffles

Ingredients for 1 servings:

  • 160 g spelt flour type 630
  • 2 egg whites
  • 2 egg yolks
  • 80 ml milk
  • 120 ml carbonated mineral water
  • 1 tsp salt
  • ½ tsp baking powder
  • 1 tbsp sunflower oil
  • 3 tbsp caraway seeds
  • Fat for the waffle iron

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Beat egg whites until stiff peaks form. Sift the spelt flour and mix it with the baking powder and salt in a bowl. Add the remaining ingredients except the egg whites and knead into a dough. Stir in a little more milk and/or sparkling water to achieve the desired consistency. Finally, carefully fold in the stiffly beaten egg whites. Bake in a greased, preheated waffle iron. This quantity makes 10 waffles when baked in a mini waffle iron. The waffles are a great accompaniment to various soups (e.g., potato soup, vegetable soup, etc.) or, with a little horseradish cream, as a snack with a glass of beer or wine.
