Port wine figs with goat's cheese on spinach

Ingredients for 2 servings:

  • 500 g leaf spinach
  • 4 figs
  • 1 dl port wine, red
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • e.g. salt and pepper
  • 100 g goat’s cheese

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

sophisticated but simple starter

Mix port wine with lemon juice and honey. Season with a little salt (just a little!) and pepper. Cut the figs crosswise and pour the liquid over them. Marinate for 3-4 hours, turning frequently. Place the figs in an ovenproof dish, press down slightly, and spread the goat’s cheese inside. Sprinkle with pepper. Pour the sauce into the dish. Bake in the center of an oven preheated to 200°C for 10 minutes. Sort the spinach and blanch it in plenty of salted water. Arrange the spinach on the plate, arrange the figs on top, and drizzle with the sauce.
