Portuguese carrot salad

Ingredients for 4 servings:

  • 10 large carrots
  • 4 cloves garlic
  • 1 bunch of coriander leaves
  • oil
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and wash the carrots with a vegetable peeler. Cook in a pot with a little salt and oil (to preserve the vitamins) until al dente. While the carrots are cooling, finely chop the garlic cloves and wash and slightly tear the cilantro leaves. Once cooled, cut the carrots into not-too-thin slices and mix with the remaining ingredients.
