Ingredients for 4 servings:

  • 500 g kidney beans
  • 1 tbsp oil
  • 2 bay leaves
  • 400 g pork ribs
  • 1 sausage, small Portuguese meat sausage
  • 100 g bacon
  • 2 carrots
  • 1 onion(s)
  • 50 g margarine
  • 1 garlic clove(s)
  • 2 tomatoes
  • 1 bunch of parsley
  • pepper

Portuguese bean stew

Soak the beans in cold water for 5-6 hours. Then cover the beans with water, add oil and 1 bay leaf, and cook for about 1 hour. In another pot, boil the pork ribs, sausage, bacon, and carrots in water. Chop the onion and brown it in the margarine. Add the garlic clove and the diced tomato, the chopped parsley, and the second bay leaf, and simmer over low heat. Add the cooked and drained beans and a little of the meat juices, season with pepper, and let it simmer. Serve the beans with the meat, sliced ​​carrots, bacon, and sliced ​​sausage.
