Postelein Salad

The perfect postelein salad recipe with a picture and simple step-by-step instructions.

  • 1 Sweet potato
  • 150 g Quinoa
  • 2 Spring onions
  • 30 g Postelein
  • 100 g Feta
  • Papika powder
  • Cayenne pepper
  • Salt
  • Oil
  • Balsamic vinegar
  1. Before cooking, wash the quinoa well. Then bring to the boil with 2.5 times the amount of water and let it soak over low heat.
  2. Peel the sweet potato and cut it into small cubes. Cut the spring onions into small rings.
  3. Heat some oil in a pan and fry the sweet potato cubes in it, season with cayenne pepper, paprika and salt. Add the onion rings, continue frying on a low heat until the potatoes are tender.
  4. When the quinoa has absorbed the water, remove it from the heat and let it cool down.
  5. Cut the feta cheese into cubes.
  6. Once the quinoa has cooled, put all the ingredients in a large bowl and mix well. Season the salad with vinegar and oil.
