Potato and apple casserole with feta

Ingredients for 3 servings:

  • 800 g potatoes, waxy
  • salt water
  • 3 apples
  • 2 tbsp lemon juice
  • 300 ml milk
  • 3 eggs
  • 2 onions, red
  • salt and pepper
  • nutmeg
  • 1 tbsp vegetable broth, instant
  • 1 tbsp, leveled butter for the dish
  • 250 g feta cheese, crumbled
  • 1 tbsp oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Boil the potatoes with their skins on in salted water, peel them, and slice them once cooled. Halve the onions lengthwise and cut them into 1 cm thick wedges. Fry them in hot oil for 1-2 minutes, then let them cool. Core the apples. Slice the apples and toss with lemon juice. Whisk the milk with the eggs and season with salt, pepper, nutmeg, and vegetable stock. Grease a 30 x 15 cm casserole dish. Alternate the potatoes and apples in the dish. Pour the egg mixture over them. Sprinkle with onions and cheese. Cook at 200°C on the second rack from the bottom for about 25 minutes.
