Potato and bean soup

Ingredients for 5 servings:

  • 600 g potatoes, peeled
  • 400 g green beans, fresh or from a can
  • 500 g buttermilk
  • 300 ml whole milk
  • ½ lemon(s)
  • n. B. Salt
  • ½ tbsp flour

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Super simple and super refreshing

If the beans are fresh, cook them in salted water until soft. Cook the potatoes until tender. Drain the water from the pot and mash the potatoes with a little of the whole milk until creamy. Mix the buttermilk with the remaining whole milk and the flour, then whisk the mixture into the potato mixture. Drain the beans and add them. Bring everything to a boil and season with lemon juice and salt.
