Potato and Egg Omelette

The perfect potato and egg omelette recipe with a picture and simple step-by-step instructions.

  • 8 kl Jacket potatoes from the previous day
  • 2 Eggs
  • 0,25 Red Paprika
  • 0,25 yellow Paprika
  • 50 gr Diced pork belly
  • 1 tsp Margarine
  • 0,5 tsp Flour
  • 1 shot Milk
  • 0,5 tsp Granular broth
  • Salt, pepper, nutmeg
  • Chives rolls
  1. Cut the paprika into strips and the potatoes into slices.
  2. Heat the pan and fry the pork belly and peppers in margarine, add the potatoes and fry them. Season with granulated broth.
  3. Whisk eggs with flour, milk, spices and chives.
  4. Pour the egg mixture over the potatoes and let set at medium temperature. Turn out onto a plate and serve with a green salad.
