Ingredients for 4 servings:
- 1,500 g potatoes
- 250 g mushrooms, fresh
- 1 liter vegetable broth
- 3 tbsp coconut milk
- 40 g processed cheese with salami flavor, reduced fat
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Peel the potatoes, wash thoroughly, and chop them into small pieces. Add them to the pot. Slice the mushrooms and add them to the potatoes. Cover the potatoes and mushrooms with the vegetable stock. Let everything simmer until soft, remove the pot from the heat, and blend the contents. After blending, add the 3 tablespoons of coconut milk and the 40g of processed cheese and simmer until the processed cheese has melted. LF30: 5.97%
