Potato and pea mash with curry fried egg

Ingredients for 4 servings:

  • 500 g potatoes
  • 100 g butter
  • 100 ml cream
  • n. B. Salt
  • n. B. Nutmeg
  • 500 g pea pods
  • 4 eggs
  • e.g. Madras curry powder
  • n. B. Pfeffer

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Clean and blanch the peas. Peel and cook the potatoes, then mash them with butter and cream. Fold the prepared peas into the mashed potatoes. Season to taste with the spices mentioned above. In a pan, prepare the fried eggs. Sprinkle with salt, pepper, and Madras curry powder to taste. Form the potato and pea mashed potatoes into (flat) balls, place them on a plate, and place the fried egg on top.
