Potato and smoked salmon salad

Ingredients for 4 servings:

  • 250 g lamb’s lettuce
  • 2 tbsp balsamic vinegar
  • 2 tbsp mustard
  • 1 onion(s)
  • 4 tbsp chicken broth
  • 2 tbsp oil
  • salt and pepper
  • 500 g jacket potatoes
  • 1 egg(s), hard-boiled
  • 150 g smoked salmon

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and trim the lamb’s lettuce. Mix the vinegar with the mustard, finely diced onions, stock, and oil. Season with salt and pepper. Toss the potato slices and lamb’s lettuce with the marinade and divide among four plates. Sprinkle the finely chopped egg over the top and arrange the salmon slices in the center.
