Potato and wild garlic strudel

Ingredients for 2 servings:

  • 300 g potatoes, floury
  • 50 g wild garlic, cut into strips
  • 2 shallots, finely chopped
  • 4 egg yolks
  • 100 g strudel sheets
  • salt and pepper
  • nutmeg
  • butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil the potatoes until soft and mash with a fork. Sauté the shallots and wild garlic in butter and season with salt and pepper. Stir the shallots and wild garlic into the mashed potatoes and knead with nutmeg and 3 egg yolks. Line the strudel sheets, fill with the mixture, roll them up, brush with the remaining egg, and bake at 175°C for about 20 minutes until golden brown. Serve as a side dish or with salad as a main course.
