- 12 potatoes
- 1 large onion(s)
- 100 g mushrooms
- 1 red bell pepper(s)
- 1 bell pepper(s), green
- 1 tbsp olive oil
- 1 tsp sea salt
- 6 tbsp mayonnaise

Halve the potatoes lengthwise. Place them on a baking sheet lined with parchment paper. Bake for 20 minutes at 180-200°C until almost cooked through. Finely chop the onion. Finely slice the mushrooms and bell peppers. Briefly fry the onion, mushrooms, and bell peppers in oil. Deglaze with a little water, add salt, and cook. Pile the vegetables on top of the potatoes. Place 1/2 tablespoon of mayonnaise on each potato. Bake for another 20 minutes at 180-200°C until golden brown.
