Minced meat – vegetable – muffins

Ingredients for 1 servings:

  • 100 g leaf spinach (frozen)
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 1 tbsp oil
  • 250 g minced meat, mixed
  • 200 g potatoes or carrots
  • 1 egg(s)
  • 50 g feta cheese
  • some paprika powder
  • e.g. breadcrumbs
  • salt and pepper
  • possibly sesame

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

hearty for the whole family, makes 12 pieces

Thaw and finely chop the spinach. Dice the onion and garlic and sauté in a little oil. Season with salt and pepper. Stir in the spinach. Finely grate the potatoes (you can use carrots instead of potatoes, if you like), mix with the ground beef, the spinach mixture, egg, and a little paprika. Add breadcrumbs if desired and knead everything into a nice dough. Divide the batter among 12 muffin cups and top with feta cheese. If you like, you can also sprinkle some sesame seeds on top; it tastes great! Bake at 200°C for about 20 minutes.
