Ingredients for 1 servings:

  • 1 tbsp salt
  • 1 egg(s)
  • 150 g corn flour
  • 100 g ground oat flakes
  • 100 g rye flour
  • 50 g wheat flour
  • 250 g potatoes, boiled, peeled, even from the previous day
  • 7 g dry yeast
  • some water
  • possibly seeds for sprinkling, e.g. sunflower seeds, oat flakes, sesame seeds…

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours

I completely reworked a potato bread recipe, and it’s delicious! Grate the potatoes. Mix all the ingredients and knead well. Let the dough rise for about 1 hour. Shape the dough into a loaf, score it as desired, and place it on a baking sheet. Sprinkle the bread with seeds. Bake at 220°C (425°F) for 20 minutes. Reduce the temperature to 200°C (400°F) and bake for another 30 minutes.
