A basic recipe for potato bread

You may already have all the ingredients for a simple potato bread at home: 300 g floury potatoes, 600 g flour, 42 g fresh yeast, 175 ml water, one egg, four tablespoons olive oil, one teaspoon sugar, and two teaspoons salt.

  • First, peel the potatoes and boil them in salted water for 30 minutes.
  • After draining, press the potatoes through a potato ricer into a bowl. Everything has to cool down first.
  • Place the flour in a large bowl and make a well in the center. Break the yeast into small pieces and place them in the well.
  • Mix the sugar with lukewarm water. Then add the mixture to the yeast and mix well. Let the pre-dough rest in a warm place, covered, for 15 minutes.
  • Mix in the potatoes, egg, salt, and olive oil and knead into a smooth dough. The dough must now rise again, but this time for 45 minutes.
  • Knead the dough well again and then shape it into a round loaf. Place this on a baking sheet lined with parchment paper. Dust the loaf with some flour and let it rest for 30 minutes.
  • Now the potato bread comes at 200 degrees and for about half an hour in the oven. It should be golden brown when you take it out.

Potato bread focaccia with mozzarella

A simple twist on potato bread is a hearty cheese crust. In addition to the ingredients for the basic recipe, you will need another five tablespoons of olive oil, three cloves of garlic, a sprig of rosemary, and 200g of mozzarella.

  • First, prepare dough according to the basic recipe. In the end, however, do not form a loaf of bread, but spread the mass as flat cakes on the baking sheet.
  • For the topping, finely chop the garlic cloves and rosemary.
  • Mix the garlic with five tablespoons of olive oil. Spread it over the flatbread and then sprinkle it with the chopped rosemary.
  • Cut 200 g mozzarella into slices and spread them on the bread.
  • Put the cheese and potato bread in the oven at 200 degrees for 30 minutes. After that, nothing stands in the way of your enjoyment.

Potato bread with walnuts

If you like walnuts, simply use them in potato bread. For this bread variation, too, first prepare the basic dough. In addition to this, you will need 60g of chopped walnuts and any other nuts or seeds you wish to add to your bread.

  • Before forming the loaf, add the chopped walnuts and fold them in.
  • Alternatively, you can also bake other nuts of your choice in the bread. We also recommend herbs such as rosemary or caraway.
  • Form the loaf of bread and then it’s time again: At 200 degrees and for 30 minutes in the oven.
